{"id":836,"date":"2009-01-30T17:44:37","date_gmt":"2009-01-31T00:44:37","guid":{"rendered":"http:\/\/cocktailhacker.com\/?p=836"},"modified":"2009-01-30T13:28:45","modified_gmt":"2009-01-30T20:28:45","slug":"super-bowl-xliii-food-5-sweets","status":"publish","type":"post","link":"https:\/\/cocktailhacker.com\/?p=836","title":{"rendered":"Super Bowl XLIII Food #5: Sweets"},"content":{"rendered":"<p>As you may have gathered from this week&#8217;s other food posts I firmly believe that no matter how healthy you eat the rest of the year, a Super Bowl party is no place for salads and rice cakes.\u00c2\u00a0 That said, there is one key category I haven&#8217;t touched on as yet, sweets.\u00c2\u00a0 I can say with near absolute certainty that if a dessert is present to me I&#8217;m going to love it.\u00c2\u00a0 That&#8217;s just how I am.\u00c2\u00a0 What about your party though?\u00c2\u00a0 What are your guests going to want and like?\u00c2\u00a0 Not surprisingly I have some thoughts on that.<\/p>\n<p>Think homemade.\u00c2\u00a0 Even if its something dirt simple I think it always has a bigger impact if you put some effort in to it.\u00c2\u00a0 Like the other foods this week, I&#8217;d stick with something fairly simple and quick, unless you can make it the day before.\u00c2\u00a0 If that&#8217;s the case, go nuts.\u00c2\u00a0 Some quick, easy options:<\/p>\n<p><strong>Cupcakes &#8211;<\/strong> Tiny cakes are always good.\u00c2\u00a0 Get a good quality mix, or make them completely from scratch.\u00c2\u00a0 For the frosting I&#8217;d highly recommend whipping up a batch of your own as it will always taste better than the tubs of frosting you can buy.\u00c2\u00a0 My personal favorite is <a title=\"Carrot Cupcakes and Cream Cheese Pecan Frosting\" href=\"http:\/\/allrecipes.com\/Recipe\/Carrot-Cake-III\/Detail.aspx\" target=\"_blank\">carrot cupcakes with cream cheese frosting<\/a>.\u00c2\u00a0 So good.<\/p>\n<p><strong>Brownies &#8211;<\/strong> Another one you could buy at the store but will be much better made at home, even from a mix.\u00c2\u00a0 I usually reach for the Ghirardelli Double Chocolate brownie mix and throw in about 1\/2 &#8211; 1 cup of walnuts.<\/p>\n<p><strong>Cookies &#8211;<\/strong> You name it and they&#8217;re going to be awesome.\u00c2\u00a0 Were I coming to your house for a party I&#8217;d vote for some <a title=\"Oatmeal Chocolate Chip Cookies\" href=\"http:\/\/allrecipes.com\/Recipe\/Chewy-Chocolate-Chip-Oatmeal-Cookies\/Detail.aspx\" target=\"_blank\">oatmeal chocolate chip cookies<\/a> that are still a little moist in the middle, but that&#8217;s just me.\u00c2\u00a0 Colton suggested some <a title=\"Sugar Cookies\" href=\"http:\/\/www.foodnetwork.com\/recipes\/alton-brown\/sugar-cookies-recipe\/index.html\" target=\"_blank\">sugar cookies<\/a> iced to look like tiny footballs.\u00c2\u00a0 Although they do sound good, it sounds like a lot more work than I&#8217;d be willing to put in to sugar cookies.<\/p>\n<p><strong>Chocolate Fondue &#8211;<\/strong> This is Lucas&#8217; choice for this year.\u00c2\u00a0 He&#8217;ll be serving it with fruit and cookies for dipping.\u00c2\u00a0 Some other tasty dipping options are pound cake and marshmallows.\u00c2\u00a0 If you&#8217;re wanting to booze this one up you could also add a bit of a <a title=\"Chocolate Fondue with Amaretto\" href=\"http:\/\/www.foodnetwork.com\/recipes\/rachael-ray\/chocolate-fondue-recipe\/index.html\" target=\"_blank\">flavorful liqueur<\/a> to your dipping chocolate.\u00c2\u00a0 Amaretto and Kalhua spring to mind as winners.<\/p>\n<p>Those are all great options but I have one final suggestion that ties in to the theme of a Super Bowl in Florida.\u00c2\u00a0 Make up a homemade key lime pie or two.\u00c2\u00a0 If you&#8217;ve never had real key lime pie made from scratch you are missing out on some serious deliciousness.\u00c2\u00a0 Below is the recipe I was given via a food newsgroup back in the mid 90&#8217;s when the internet was just getting rolling.\u00c2\u00a0 It&#8217;s always come out fantastic and I&#8217;ve never felt the need to change it up.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-838\" title=\"palmtrees500\" src=\"http:\/\/cocktailhacker.com\/wp\/wp-content\/uploads\/2009\/01\/palmtrees500.jpg\" alt=\"palmtrees500\" width=\"500\" height=\"335\" \/><\/p>\n<pre><strong>Key Lime Pie<\/strong><\/pre>\n<pre style=\"padding-left: 30px;\"><strong>4 Egg Yolks\r\n1 14 oz Can of Sweetened Condensed Milk\r\n1\/2 cup Key Lime Juice (I use Nelly and Joe's)\r\nZest of One Lime\r\n8\" or 9\" Graham Cracker Crust\r\nFresh Whipped Cream\r\n<\/strong><\/pre>\n<pre style=\"padding-left: 30px;\"><strong>1) Preheat oven to 350F\r\n2) Combine yolks, condensed milk, lime juice and zest with a mixer.\r\n3) Pour the filling in to the crust and smooth with a spatula.\r\n4) Bake for 15-20 minutes to firm filling.\r\n5) Chill for at least an hour.\r\n6) Top with fresh whipped cream.<\/strong><\/pre>\n<p>Some quick comments on this recipe.\u00c2\u00a0 The filling that results from this recipe will only fill about 1\/2 of the pie shell, the other 1\/2 can be filled with whipped cream.\u00c2\u00a0 However, what I usually do is double the recipe so that it fills the crust completely and bake for 30-40 minutes.\u00c2\u00a0 Then still top the slices with fresh whipped cream.\u00c2\u00a0 Another twist is you can <a title=\"Instructables - How to Chiffonade\" href=\"http:\/\/www.instructables.com\/id\/How-to-Chiffonade\/\" target=\"_blank\">chiffonade<\/a> mint and add it to the whipped cream once you&#8217;ve gotten to firm peaks.\u00c2\u00a0 This adds another layer of flavor and works well with the lime.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>As you may have gathered from this week&#8217;s other food posts I firmly believe that no matter how healthy you eat the rest of the year, a Super Bowl party is no place for salads and rice cakes.\u00c2\u00a0 That said, there is one key category I haven&#8217;t touched on as yet, sweets.\u00c2\u00a0 I can say [&hellip;]<\/p>\n","protected":false},"author":2,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[75,6],"tags":[209,10,74],"class_list":["post-836","post","type-post","status-publish","format-standard","hentry","category-food","category-recipes","tag-food","tag-recipe","tag-super-bowl"],"_links":{"self":[{"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=\/wp\/v2\/posts\/836","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=\/wp\/v2\/users\/2"}],"replies":[{"embeddable":true,"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=836"}],"version-history":[{"count":3,"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=\/wp\/v2\/posts\/836\/revisions"}],"predecessor-version":[{"id":840,"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=\/wp\/v2\/posts\/836\/revisions\/840"}],"wp:attachment":[{"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=836"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=836"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/cocktailhacker.com\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=836"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
