Aptly Named"},"content":{"rendered":"<p>While the middle of winter isn&#8217;t generally the time you crave a nice, cold sour, I found this one to have truly been aptly named.\u00c2\u00a0 The delicious sour is nicely balanced, big, cold and frothy.\u00c2\u00a0 First on your palate you get fruity hints of the apple and peach.\u00c2\u00a0 Following that, I noted that it wasn&#8217;t nearly as sweet as I expected it to be, rather it was nicely balanced.\u00c2\u00a0 Finally, the egg white gives this drink a tremendous mouth feel in the same way that it does with other drinks.\u00c2\u00a0 There are a couple interesting points to be made, though.<\/p>\n<p style=\"text-align: center;\"><a title=\"Delicious Sour by ReeseCLloyd, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/reeselloyd\/5391468452\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm6.static.flickr.com\/5053\/5391468452_3360618f54.jpg\" alt=\"Delicious Sour\" width=\"500\" height=\"333\" \/><\/a><\/p>\n<p>First, let&#8217;s talk peach brandy.\u00c2\u00a0 If you walk into your local liquor store and go to the brandy aisle you&#8217;re going to get the same response that I did.\u00c2\u00a0 Namely, peach brandy is kept over with the liqueurs and really isn&#8217;t a brandy at all.\u00c2\u00a0 Peach brandy, as most know it, is a brandy based, peach flavored liqueur.\u00c2\u00a0 At this point I&#8217;m certain some of you are saying something to the effect of &#8220;But, what about eau de vie?&#8221; and you&#8217;re absolutely correct.\u00c2\u00a0 Peach eau de vie is technically peach brandy proper.\u00c2\u00a0 However, after mixing this drink I&#8217;m certain that&#8217;s not what the author (\u00e2\u20ac\u0153The Only William\u00e2\u20ac\u009d Schmidt) intended.\u00c2\u00a0 Without the sweetness of the peach brandy the drink would need additional sweetening to balance things out.<\/p>\n<p>Second, let&#8217;s talk lime juice.\u00c2\u00a0 The original recipe in <a title=\"Amazon - The Flowing Bowl\" href=\"http:\/\/www.amazon.com\/gp\/product\/142761458X\" target=\"_blank\">Schmidt&#8217;s Flowing Bowl<\/a> and my source, <a title=\"Vintage Spirits and Forgotten Cocktails\" href=\"http:\/\/www.amazon.com\/Vintage-Spirits-Forgotten-Cocktails-Alamagoozlum\/dp\/1592535615\/ref=sr_1_1?ie=UTF8&amp;qid=1291699368&amp;sr=8-1\" target=\"_blank\">Vintage Spirits and Forgotten Cocktails<\/a>, calls for the juice of one lime.\u00c2\u00a0 Being a details type of guy this wasn&#8217;t an exact enough measure for me so I did some experimentation.\u00c2\u00a0 After that foot work (or should it be arm work) I can say that you have two options.\u00c2\u00a0 If you prefer a drier cocktail go with 1 1\/2 oz of lime juice and omit the sugar entirely (my personal preference).\u00c2\u00a0 The resulting drink still has a mellow sweetness from the peach brandy and isn&#8217;t overly tart.\u00c2\u00a0 If you prefer a bit more sweetness bump the lime juice up to 2 oz (which I did, in fact, get from one giant lime) and keep the tsp of sugar.\u00c2\u00a0 The added lime juice balances the extra sugar.<\/p>\n<p>Lastly, I felt this drink needed some additional complexity.\u00c2\u00a0 I found that complexity in 3 dashes of bitters.\u00c2\u00a0 I used my homemade version of <a title=\"CH - Robert Hess' House Bitters\" href=\"http:\/\/cocktailhacker.com\/?p=621\" target=\"_blank\">Robert Hess&#8217;
