Dancing Pines Distillery"},"content":{"rendered":"<p>One thing that never ceases to impress me about distillers is their passion for what they do.\u00c2\u00a0 A few weeks back I took a trip north to <a title=\"Dancing Pines Distillery\" href=\"http:\/\/www.dancingpinesdistillery.com\/\" target=\"_blank\">Dancing Pines Distillery<\/a> in Loveland, CO.\u00c2\u00a0 Walking through the front door I met with another display of that passion.\u00c2\u00a0 The still is right up front, Kimberly Naslund (one of the co-founders and distillers) was eager to answer any questions I had and, most notably, their products were highlighted everywhere you went.\u00c2\u00a0 This isn&#8217;t an operation built for the sole purpose of making money.\u00c2\u00a0 This is the result of great passion being unleashed on a dream.<\/p>\n<p style=\"text-align: center;\"><a title=\"Dancing Pines Pot Still by ReeseCLloyd, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/reeselloyd\/5243760623\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm6.static.flickr.com\/5243\/5243760623_1f111ccb1e.jpg\" alt=\"Dancing Pines Pot Still\" width=\"500\" height=\"333\" \/><\/a><\/p>\n<p>The folks at Dancing Pines, despite having only been producing for a few months, have lofty ambitions.\u00c2\u00a0 Already on the market are their white and aged rums.\u00c2\u00a0 In process and on the shelves soon are a spiced rum, espresso liqueur and chai liqueur.\u00c2\u00a0 And, not to rest on their laurels, they also have a gin and bourbon in the works.\u00c2\u00a0 Very impressive from a small craft distiller.\u00c2\u00a0 Though, like many craft distillers their immediate goal isn&#8217;t world (or even country-wide) domination.\u00c2\u00a0 Rather they&#8217;re focused on making a really good product and keeping their loyal, local customers happy.\u00c2\u00a0 So, what of those products?\u00c2\u00a0 I got to taste a bunch, here&#8217;s the low down.<\/p>\n<p style=\"text-align: center;\"><a title=\"Dancing Pines Spirits Line by ReeseCLloyd, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/reeselloyd\/5244357324\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm6.static.flickr.com\/5205\/5244357324_9afd68734b.jpg\" alt=\"Dancing Pines Spirits Line\" width=\"500\" height=\"333\" \/><\/a><\/p>\n<p>White Rum &#8211; 80 proof &#8211; A combination of black strap and grade A molasses give this rum a complex flavor.\u00c2\u00a0 Exactly what they were looking for.\u00c2\u00a0 Having sampled rums from Cuba and other less common locales the distillers were looking for a flavor that wasn&#8217;t as deeply distilled and more reminiscent of the starting sugar.\u00c2\u00a0 The goal of this endeavor was to create a rum that was complex and bold enough to stand up to mixers.\u00c2\u00a0 They met that goal while creating a rum that wasn&#8217;t too rough.\u00c2\u00a0 I think this could be really interesting in a <a title=\"CH - Mojito\" href=\"http:\/\/cocktailhacker.com\/?p=1127\" target=\"_blank\">Mojito<\/a>.<\/p>\n<p>Aged Rum &#8211; 94 proof &#8211; Aged with charred oak spirals, a technique used in wine making, the Dancing Pines aged rum has solid vanilla notes that come through in the nose and in the flavor.\u00c2\u00a0 The sweetness and flavor of the molasses are still present, but more muted than what I found in the white rum.\u00c2\u00a0 Another tasty choice, this one plays nicely in a <a title=\"CH - Daiquiri\" href=\"http:\/\/cocktailhacker.com\/?p=40\" target=\"_blank\">Daiquiri<\/a>.<\/p>\n<p>Spiced Rum &#8211; A spiced rum where you can really taste the real spices that were used in the mix.\u00c2\u00a0 Quite refreshing.\u00c2\u00a0 Interestingly, they also add some teas to the spice mix for added depth and complexity.\u00c2\u00a0 In addition, Dancing Pines adds a touch of additional molasses for sweetness and flavor.\u00c2\u00a0 Overall, the spice flavors are well balanced and tasty.<\/p>\n<p>Chai Liqueur &#8211; This definitely smells like a good chai.\u00c2\u00a0 Really nice sweetness level and a good blend of tea and spice flavors.\u00c2\u00a0 In the aroma you get nice hits of cardamom and tea, just as you would in a chai tea.\u00c2\u00a0 I really like this liqueur, it&#8217;s complex and not overly sweet.<\/p>\n<p>Espresso Liqueur &#8211; Like the chai this smells just like a good cup of espresso.\u00c2\u00a0 Again, not overly sweet with a nice coffee flavor that&#8217;s bright, clean and not overly processed.<\/p>\n<p>I had a great time at Dancing Pines and really enjoyed sampling their spirits.\u00c2\u00a0 I&#8217;ll be very interested to taste how their bourbon comes out when it&#8217;s bottled some time next year.\u00c2\u00a0 And, a pot stilled gin you say?\u00c2\u00a0 Now I&#8217;m really interested.<\/p>\n<p style=\"text-align: center;\"><a title=\"Dancing Pines Cocktail Menu by ReeseCLloyd, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/reeselloyd\/5243760977\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm6.static.flickr.com\/5168\/5243760977_1561576b9b.jpg\" alt=\"Dancing Pines Cocktail Menu\" width=\"500\" height=\"333\" \/><\/a><\/p>\n<p>If you&#8217;d like to check out their products and operation for yourself, they offer tours, samples and cocktails every Friday from 4-7pm.\u00c2\u00a0 The cocktails change and if you buy one you get the cost reimbursed when you buy a bottle.\u00c2\u00a0 They&#8217;ve also got some events and contests that they run through their <a title=\"Facebook - Dancing Pines Distillery\" href=\"https:\/\/www.facebook.com\/pages\/Dancing-Pines-Distillery\/301887483095?ref=ts\" target=\"_blank\">Facebook page<\/a>.<\/p>\n<hr \/>\n<p>\u00e2\u20ac\u00a0 The product reviewed here was provided to me as a free sample.
