Deceptively Pink"},"content":{"rendered":"<p>As you mix your first Singapore Sling you&#8217;ll note that the color is decidedly pink.\u00c2\u00a0 There are some out there, myself included, who naturally shy away from all things pink.\u00c2\u00a0 It&#8217;s a self protection mechanism of sorts.\u00c2\u00a0 I ask of you only one favor at this time.\u00c2\u00a0 When you get that first Singapore Sling fully mixed, turn off that anti-pink mechanism just long enough to take your first sip.\u00c2\u00a0 After that it won&#8217;t matter any more.\u00c2\u00a0 You&#8217;ll gleefully consume the rest of the drink, pink color be damned.<\/p>\n<p style=\"text-align: center;\"><a class=\"flickr-image alignnone\" title=\"Singapore Sling\" href=\"http:\/\/www.flickr.com\/photos\/86318258@N00\/3579741439\/\" target=\"_blank\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm3.static.flickr.com\/2438\/3579741439_435d3ef733.jpg\" alt=\"Singapore Sling\" \/><\/a><\/p>\n<p>This drink is more complex than it would seem at first blush.\u00c2\u00a0 I assumed that the flavor will be overly sweet and fruity from the pineapple and liqueurs.\u00c2\u00a0 This is where the club soda is key.\u00c2\u00a0 It lightens the sweetness of the drink and adds a small amount of effervescence.\u00c2\u00a0 As you bring the drink up for that sip you&#8217;ll notice a gentle and entirely pleasant earthy aroma.\u00c2\u00a0 This is from the Benedictine and to some degree the bitters.<\/p>\n<p>Now for the flavor.\u00c2\u00a0 Tremendously refreshing.\u00c2\u00a0 Some recipes call for lime or lemon juice while others, the Joy of Mixology recipe included, do not.\u00c2\u00a0 I found that the citrus juice added a slight hint of sourness to the drink that was necessary to round out the flavors.\u00c2\u00a0 Without it the drink was simply overly sweet for my palate.\u00c2\u00a0 The bitters aren&#8217;t directly present as they are in some cocktails, the Manhattan for example, but they are there.\u00c2\u00a0 Overall the flavor is well balanced and quite delicious.<\/p>\n<p>In looking at recipes I found a multitude of variations.\u00c2\u00a0 There were two that stood out to me.\u00c2\u00a0 One recipe didn&#8217;t call for pineapple juice at all.\u00c2\u00a0 This changes the flavor profile of the drink entirely.\u00c2\u00a0 I&#8217;d go so far as to say the resulting drink isn&#8217;t a Singapore Sling at that point, but rather something else, delicious or otherwise.\u00c2\u00a0 The pineapple juice is absolutely essential.\u00c2\u00a0 Another recipe I ran in to included all the usual ingredients in their usual amounts but left off the club soda.\u00c2\u00a0 While the resulting drink was very good I don&#8217;t think you could call it a sling any longer.\u00c2\u00a0 Slings are a class of sparkling sours, of which the Tom Collins is also a member.\u00c2\u00a0 So, to leave off the club soda is to remove the cocktail from the sling category.<\/p>\n<p>Once all the proverbial dust had settled my favorite recipe is the one found in <a href=\"http:\/\/www.amazon.com\/gp\/product\/1592535615?ie=UTF8&amp;tag=cockthacke-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=1592535615\">Vintage Cocktails and Spirits<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border:none !important;
